There are lots of wild fruits in the mountains of Yunnan. Some of them grow on the trees, some near the root, some on the vines... Each fruit has its unique sour and sweet flavor. Today, I took Dawang with me into the mountains to find a wild fruit. We call them "zha ou" in our local language. 莲藕的成熟季节大多在8月份,云南的第一批藕已经成熟啦,云贵高原充足的日照环境下种出来的藕,脆脆甜甜的,去田里挖了几个回来,搞几道当地的小菜尝个鲜,仿佛吃到了夏天阳光的味道! ※Click "cc" on the lower right menu to choose your subtitle language. Lotus roots usually harvest in August. However in Yunnan, the first lotus roots can be harvested already. They are crispy and sweet. So I made several local dishes with them. 怒江让云南这个地方多了一份神奇,怒江边上能种很多热带的水果,荔枝,芒果,香蕉,鸡蛋果等等。酷热的夏天,去采了些晶莹剔透的荔枝,做一些我家里人没有吃过的菜,水晶荔枝虾球、冰爽荔枝啤酒、荔枝脆皮烤鱼......这个新鲜的味觉体验,既解暑又满足~ ※Click "cc" on the lower right menu to choose your subtitle language. Salween River adds a magical touch to Yunnan with multiple tropical fruits growing alongside the riverbank, such as lychees, mangoes, bananas and egg fruits (canistel) I picked some lychess during the hot summer and made dishes rare to my families. I made shrimp balls with crystal lLychees, refreshing lychee beer and roast fish with lychees. I like all kinds of colorful stones, large and small. So I picked some with Dawang alongside Nujiang. I made several dishes, including pepper salt stone pancakes, stone fish in wooden bucket and roasted sausage on stones with the black stones. I also made two paintings with the rest. 还记得上次在大理拍的乳扇吗? 和乳扇类似的还有大理剑川的乳饼,分为羊乳饼和牛乳饼两种,用当地人的话来说,乳饼肯定是羊奶做的才正宗!用山羊奶成的质量最好,白色块状,酷似豆腐块,所以也称为奶豆腐。 新鲜的羊奶煮开,加上发酵的酸水和当地特有的植物羊乳饼花,使奶清分离,做法和乳扇有相同之处~浓浓的羊乳香,软软糯糯的口感,油煎,蒸火腿,煮醪糟,烤芝士都别有一番风味~ ※Click "cc" on the lower right menu to choose your subtitle language. Remember the episode about Rushan Cheese we shot in Dali? Similar to Rushan, people in Jianchuan, Dali also make milk cakes, including goat milk cake and the cow milk one. 4月的玫瑰花是开得最美的时候,阿奶家种的玫瑰花每天都要采摘,我去要了一些,做一罐玫瑰花酱 关于玫瑰花酱的做法有很多,但我还是钟爱加了大理雕梅汁的这一种,酸梅汁中和了玫瑰淡淡的花涩,保留了玫瑰的醇香,酿出一抹独特的香甜。炎炎夏日,做任何甜点都能加上一些,就算冲个水喝,也别有一番滋味~ ※Click "cc" on the lower right menu to choose your subtitle language. There are many ways to make rose petal jam, but my favorite is the one with Dali carved plum juice. 第一次听说这个名字的时候,我以为是用牛屎发酵来酿的酒,就特意请教做牛屎酒的龙哥,傣族自家烧的小锅米酒放置一年以上才能转入土罐子里,用盐霜树做木塞子,裹上牛皮纸,热蜂蜡封口,再敷上新鲜牛屎存储2年以上,才是正儿八经的牛屎酒。 爷爷是一个爱酒的人,对他来说,酒便是生活最好的调味品。第一次拍酒的视频,就是三年前的玉米酒,很快,已经过去三年了 来,我看看有多少伙伴是那个时候认识我的? ※Click "cc" on the lower right menu to choose your subtitle language. The first time I heard the name, I thought the wine was made of bull dung. So I asked Brother Long who is good at making bull dung wine. He told me that the decent bull dung wine uses homemade rice wine which has been stored for over a year before taking it into a jar. The plugger should be made of a salty tree branch and wrapped in brown paper. The jar needs to be sealed with melted bee wax then cover the bottleneck with fresh bull dung to store for at least two year. My grandpa enjoys drinking wine. 一种味道类似茶叶尖的嫩树芽,我们叫:“牛涩子尖”,只有春天的时候才有,不知道名字的由来,爷爷说他小时候就这么叫的,小时候每次放牛都会掐一些回来,这也算是比较全能的野菜了,炒,蒸,拌,烩都非常美味,特别喜欢它微苦味道里的回甘,也喜欢它嫩嫩清爽的口感! ※Click "cc" on the lower right menu to choose your subtitle language. We call these tea-like fresh sprouts “Niusezi Jian”. They’re only available in the spring. No one knows where the name came from and my grandpa called it this way when he was young. I would always pick some spring sprouts whenever I herded the cattle as a kid. They can be stir-fried, steamed or made into cold dishes. 你们多久没有去捉田螺了? 小时候喜欢去捉田螺,没捉到几只还滚了一身泥巴回来,小豪不像我小时候那么贪玩,但还是和我一样嘴馋,我们捉了一桶螺丝回来,做了两个口味的,田螺除了难洗,没有别的缺点了~烀田螺、香辣田螺都特别好吃! ※Click "cc" on the lower right menu to choose your subtitle language. When was the last time you caught those river snails? I enjoyed catching river snails when I was a kid. But I usually came home all muddy with little success. My brother Hao isn't as naughty, though he likes eating just like me. We caught a bucket of river snails and made two dishes. Aside from hard to clean, river snails are the best ingredients. The crateva unilocularis are budding in the mountains and the first buds are the freshest. Enjoy them while my little sis is at home! Crateva unilocularis are also called the king of wild vegetables. They contain various minerals and is very nutritious. These leaves are tender, with a uniquely fresh fragrance. My family enjoy them due to this fragrance. 大王特辑终于来啦~ 2016年的时候在街上看到一只阿拉斯加,特别喜欢,回云南的第二年就养了一只,它胆子特别小,就故意给它取了个霸气的名字叫:大王~后来大王每天都和我生活在村里,给了我很多陪伴和快乐~希望它能健康快乐的一直在我身边~谢谢可爱的你们能喜欢我家大王! ※Click "cc" on the lower right menu to choose your subtitle language. 关于手打牛肉丸,我们吃得比较多的就是傣味牛丸,牛肉丸制作难度大,对肉质要求也高! 需要用新鲜的牛后腿或者牛脊肉,不能冰冻和隔夜,用每根3斤重的铁棒用力敲打,中间不能停顿太久,需要在30分钟之内将肉完全敲成肉泥,停顿太久或者力度不够,肉的水份大量流失,越敲越干,成不了肉泥!然后需要加入盐巴,淀粉和冰水搅拌,冰水少量多次加,用手搅拌10分钟以上,至肉泥完全上劲……然后放入70度左右的热水里塑形,最后煮熟! 这样做出来的丸子才Q弹有嚼劲儿,吃起来非常爽口~你们以后吃牛肉丸,别讲价了😂😂😂 ※Click "cc" on the lower right menu to choose your subtitle language. Speaking of homemade beef balls, we mostly enjoy the Dai-style ones. These beef balls are very hard to make and require some high-quality beef! To make beef balls, you will need rump steak or sirloin. The beef should be fresh, not frozen nor overnight. Pound the beef with 1.5 kg iron bars continuously with enough strength and short pauses. The beef should be finely pulverized in 30 minutes. Otherwise, moisture loss will make the beef much drier and unable to form into paste. Add in salt and starch. Gradually add in ice water and mix well with hands for at least 10 minutes, until the mixture is completely elastic. Put beef balls into 70℃ hot water to shape them and boil until cooked! By doing so, the beef balls are much chewy and crunchy, making them both tasty and refreshing. Mid-Autumn Festival is just around the corner and I went into the mountains with Xiaohao to pick some fruits. They are called sugar apples because they are similar to the hair of the Buddha. It is said that you can tell a Bai girl’s ingenuity from her carved plums! Use a knife to carve patterns onto a plum and squeeze the nucleus out. Slightly press the plum meat into the shape of a chrysanthemum to marinade with granulated sugar for at least a month. My favorite way to enjoy carved plums is to serve it alongside streaky pork. 你们对大理的印象是什么?对我来说,还是这份奶香浓郁的乳扇,至今都无法用机器代替! “云南十八怪,牛奶做成片片卖”说的就是大理的乳扇! 用新鲜的牛奶和自然发酵的酸浆融合,鲜奶中所含的蛋白质(主要是酪蛋白)发生变性而凝固,牛奶逐渐生成絮状物,用木棒轻搅汇聚后用手辅助搅捏成乳团。 将生成的乳团取出后,先压圆成饼,接着用两木棒在手中搓压成大长饼,最后将湿滑之乳饼片的两端拉出角形,缠铺于竹制梯状晾架上,晒干后的乳扇有特别浓郁的奶香味,油炸还是炭烤都特别好吃! ※Click "cc" on the lower right menu to choose your subtitle language. What is your impression of Dali? For me, it is this intense milky scent from Rushan cheese, which cannot be produced by machines yet! The old saying “18 Odds of Yunnan, milk in pieces for sale” refers to Rushan cheese from Dali! It is made of fresh milk and its naturally fermented sour liquid. The proteins in milk (mostly casein) denatures and starts to form solid clumps. Use a wooden stick to mix gently and squeeze the mixture into a diary dough with hands. Take the dairy dough out and press into round shapes. Then use two sticks and twist them into longer shapes.
